Rita was born January 11, 1933 to Brazil and Tena Grisaffi in Beaumont, Texas. She attended St. Agnes Academy High School (Fannin Street) in Houston, Texas and graduated in 1951. She enjoyed playing cards with friends, and cooking. For many years, cooking was her passion. Family and friends enjoyed delicious meals and desserts in which she took much pride.
After her husband Jim died she enjoyed gathering around the kitchen table and playing games that included hand and foot, mexican train and RummiKub with friends. A good cup of coffee and some type of dessert was always available.
She is preceded in death by her husband, Jim Dillon. She is survived by her daughter, Dianna Dillon Anderson (Wesley), daughter, Carol Dillon Pfeil (Ken), and son, Jim Dillon Jr. (Elizabeth).
Grandchildren include Jennifer Pfeil Cupps (Ryan), Blake (Amber) Dillon, Isabella Dillon and great-granddaughter Caroline Cupps.
A rosary will be held at St. Bartholomew the Apostle Church in Katy, TX Sunday November 22, 2026 at 3 p.m. A funeral mass will be held at St. Bartholomew the Apostle Catholic Church in Katy, TX Monday, November 23rd, 2026 at 10:30 a.m.
